Winemaker
After a career in science, biological engineering, and agronomy in Perpignan, it was in Montpellier that Fabrice Boullier undertook his National Diploma in Oenology. Wishing to offer his knowledge as a consultant oenologist and yet wishing to be at the heart of the winemaking process, it was only natural that Fabrice joined us in 2001 as a cellar master. His ambition is to “bring out the best of our terroir, highlight it in our wines and place Domaine de Baronarques among the best estates in the Languedoc”. His favourite wine: Domaine de Baronarques Grand Vin rouge for its concentration and richness, while retaining the freshness of our terroir. To be paired with a recipe he has created himself: a shoulder of lamb confit with honey from the garrigue and rosemary, accompanied by new potatoes and pan-fried seasonal vegetables.
About the Winery
The venerable estate was bought by Baroness Philippine de Rothschild and her two sons, Philippe Sereys de Rothschild and Julien de Beaumarchais de Rothschild, in December 1998. The vineyard and winemaking facilities have since been extensively renovated. Located in the commune of Saint-Polycarpe, near Limoux in the Aude department of southern France, Domaine de Baronarques has 43 hectares (106 acres) of vines with a diversity of soils, micro-climates, and red and white grape varieties that give the complexity and elegance of its wines.
