Winemaker
The beautiful and extensive historic cellars of more than 1500 square meters ensure wines are produced, aged, and stored in perfect conditions. Around 30 appellations are produced by the winery, coming from the most prestigious terroirs of burgundy. From Côte de Beaune to Côte de Nuits; from village appellations to grands crus level wines.
About the Winery
Whilst the production is still small scale (Les Parcellairs de Saulx is 25,000 bottles per year), the aim is to achieve 60,000 bottles by 2027. Organic and biodynamic production methods are utilised wherever possible. This approach is based on not blending any wines coming from different sources, so each wine is the product of the vines belonging to a single wine grower and very often only one of their plots. This stems from respect for the authenticity of the terroir, the work of the wine producer and the diversity of the Burgundian climates. Their philosophy is depicted in their name: “Parcellaires” means “made from single plots”.
